Soyabeans Couscous Pulao

Recipe

Heat Oil in a small pressure cooker add bay leaf, cumin seeds, mustard seeds, green chilly and curry leaves.
Once cumin and mustard seeds pop, add chopped onions.
When the onion turns pink, add chopped tomatoes, ginger, broken wheat, soyabeans, salt, sambhar masala or garam masala and all ingredients except coriander leaves.
Add 200 ml water, close the lid and switch off after 2 whistles of the pressure cooker.
Garnish with chopped coriander leaves and serve hot with salads, curd or cucumber raita.

You can substitute soyabeans with Bengal grams soaked overnight.
You can substitute broken wheat with any other cereal like oatmeal, whole cornmeal, barley soaked overnight, brown rice soaked overnight, wild rice, buckwheat and quinoa.
